Hydromel

Hydromel is the oldest fermented drink and existed before wine and beer.
This drink was enjoyed by all the ancient civilizations (Slavic, Greek, Gallic, Celtic, Egyptian...)
This bottle is made from honey of exellent quality and of spring water from the Savoy Mountains.
Served chilled, as an aperitif with cheese cubes.
It also goes very well with foie gras, or with dessert.
It improves with ageing.

"DANSE DES ABEILLES" has regulary won gold medals in the general agricultural competition for 15 years.

The making of hydromel


Hydromel is manufactured with an assembly of various honeies and then it ferments with spring water of mountain of Haute-Savoie.
It is a fermented drink obtained starting from two ingredients: water and honey.
For a mixture of water and honey, it is necessary to add the yeasts which will degrade various sugars of honey. After a fermentation, which lasts between 1 and 3 months, hydromel rests on its dregs. For the setting in bottles, it is necessary to carry out joining (bentonite and fish glue) and filtration (marine sediments and membrane).
The gustatory and olfactive différencess come from the assembly of various honeies.
Honey is in the beginning a " juice of flowers ". Between the various soils and the various flowers, plus the flavours fermentaires, gustatory and olfactive complexity is impressive.
